A-w-w Shucks

I just love this time of the year.  It's time for the sweet corn harvest here in Minnesota.  There is nothing better than sweet corn lathered in butter or roasted on the grill until it caramelizes.  Another yummy thing to do is to dry sweet corn outside under the summer sun.  You need to give it a quick cook/chill and remove the kernels with a spoon to keep them as whole as possible. I put them on cookie sheets or clean white flour cloths with a fine screen on top to keep flying buggies away and then just add sunshine.  Once dry you save the dried kernels in a jar. Tradition has it that on the first snow day you add some dried sweet corn to a batch of delicious homemade beef and garden vegetable soup.
